  • 4 medium potatoes (diced)
  • 1 large onion (diced)

  • 6 cups chicken broth
  • 1 bunch kale (chopped)
  • 1 cup heavy cream (or half-and-half)
  • Olive oil
  • Salt
  • Pepper
  • Optional red pepper flakes

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the chicken sausage and cook until browned, breaking it apart as it cooks (about 5-7 minutes).
  2. Stir in the diced onion and sauté for 3-4 minutes until softened. Then add minced garlic and cook for another minute.
  3. Add diced potatoes and chicken broth, bringing the mixture to a boil before reducing to a simmer for about 15 minutes or until potatoes are tender.
  4. Mix in the chopped kale and optional red pepper flakes. Cook for an additional 5 minutes.
