  • 3 zucchinis
  • 2 cups bread crumbs (gluten-free if needed)
  • 3/4 cup cashews
  • 1 cup almond milk
  • 28 oz jar tomato sauce
  • 5 oz vegan mozzarella shreds
  • Olive oil for frying
  • 2 Tbsp Italian herbs
  • 3 cloves garlic
  • Salt, pepper to taste

Instructions

  1. Preheat your oven to 410°F (210°C) and prepare an 8×11 inch casserole dish.
  2. Slice zucchinis and layer them on a baking sheet; salt generously, cover with paper towels, and let rest for 30 minutes to drain moisture.
  3. In a blender, combine cashews, almond milk, salt, and pepper until smooth.
  4. Heat olive oil in a frying pan. Dip zucchini slices into the cashew mixture, then coat with bread crumbs. Fry for about 2 minutes on each side until golden brown.
  5. In the casserole dish, spread some tomato sauce. Layer zucchini slices with vegan cheese and repeat until all ingredients are used. Finish with sauce and cheese on top.
  6. Bake for 20 minutes until bubbly and golden brown. Let cool briefly before serving.
