  • 4 medium zucchinis
  • 1 lb lean ground turkey
  • 1 cup low-carb marinara sauce
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 large eggs
  • Olive oil
  • 2 cloves garlic
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice zucchinis lengthwise into thin strips, sprinkle with salt, let sit for 10-15 minutes to draw out moisture, then pat dry.
  3. In a large skillet, heat olive oil over medium heat. Add ground turkey and cook until browned.
  4. Stir in minced garlic and half of the dried herbs; cook for an additional 2 minutes.
  5. Mix in marinara sauce and simmer for 5 minutes before removing from heat.
  6. In a mixing bowl, combine ricotta cheese, one cup of mozzarella cheese, grated Parmesan cheese, eggs, and remaining herbs.
  7. In a baking dish, layer meat sauce, zucchini slices (overlapping), cheese mixture, and repeat until all ingredients are used.
  8. Top with remaining mozzarella cheese and cover with foil.
  9. Bake covered for 30 minutes; uncover and bake an additional 15 minutes until golden brown.
  10. Let rest for 10-15 minutes before serving.
