  • 2 ½ pounds stew meat
  • 36 tablespoons olive oil
  • 1 cup apple vinegar
  • 4 cups beef stock
  • 5 medium carrots, chopped
  • 1 pound baby Yukon gold potatoes
  • 2 cups chopped yellow onions
  • 4 minced garlic cloves
  • Optional: corn starch for thickening

Instructions

  1. Prepare all vegetables by chopping them into bite-sized pieces.
  2. In a large skillet, heat olive oil over medium-high heat and brown the seasoned stew meat for about 5 minutes. Transfer to a crockpot.
  3. Sauté onions in butter until translucent; add garlic and cook briefly before adding to the crockpot.
  4. Combine remaining ingredients in the crockpot: apple vinegar, beef stock, bouillon cubes, tomato concentrate, carrots, potatoes, bay leaves, rosemary, and peas.
  5. Set the crockpot on low and cook for approximately 210 minutes (3.5 hours). If desired, thicken with corn starch during the last hour.
