  • 2 medium sweet potatoes, peeled and diced
  • 2 cloves garlic, minced
  • 12 ounces short pasta, such as rigatoni or penne
  • 4.2 ounces goat cheese, crumbled
  • 1/4 cup heavy cream
  • 20 fresh sage leaves
  • 2 tablespoons olive oil, plus more for drizzling
  • 1 tablespoon unsalted butter
  • Salt and freshly ground black pepper, to taste
  • 1 ounce grated parmesan cheese
  • Crushed red pepper flakes

Instructions

  1. Preheat your oven to 430°F (220°C). Toss diced sweet potatoes and minced garlic with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
  2. Cook short pasta in salted boiling water according to package instructions until al dente. Reserve about 2/3 cup of cooking water before draining.
  3. In a skillet over medium heat, add remaining olive oil and unsalted butter. Fry sage leaves until crispy, then remove and drain on paper towels.
  4. Combine roasted sweet potatoes in the skillet, mashing half while keeping some chunks intact.
  5. Add drained pasta to the skillet along with heavy cream and crumbled goat cheese. Toss everything together until creamy; adjust consistency with reserved pasta water as needed.
  6. Season with salt and pepper to taste. Serve topped with crispy sage leaves and an optional drizzle of olive oil.
