  • 1 1/2 cups all-purpose flour
  • Scant 2/3 cup old-fashioned rolled oats
  • 1 cup organic cane sugar
  • Scant 1/2 teaspoon kosher salt
  • 2 teaspoons baking powder
  • 1 1/4 cups full-fat oat milk
  • 1 1/2 teaspoons pure vanilla extract
  • 1/4 teaspoon pure almond extract (optional)
  • vegan vanilla ice cream (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice peaches and mix with blueberries, brown sugar, and spices in a bowl; let sit for 30 minutes.
  3. In a cast iron skillet over medium heat, melt vegan butter until golden brown.
  4. Combine flour, oats, sugar, salt, and baking powder in another bowl. Add oat milk and extracts; mix gently.
