  • 1/2 cup grated parmesan cheese
  • 1 large egg plus 1 yolk
  • 1 1/2 pounds ground turkey
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil or avocado oil, for brushing and frying
  • 2 tablespoons ghee or unsalted butter
  • 1 tablespoon olive oil
  • 1/2 cup finely minced onion
  • 6 cloves garlic, pressed
  • 2 teaspoons Italian seasoning
  • 1 (15 ounce) can plus 1 cup organic pumpkin puree
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 3/4 cups chicken stock
  • 1/2 cup grated parmesan cheese
  • 1/4 cup heavy cream
  • 2 tablespoons maple syrup
  • 1 tablespoon chopped fresh sage

Instructions

  1. In a large bowl, combine fresh breadcrumbs with milk and let sit for 2-3 minutes.
  2. Add minced onion, garlic, sage, parsley, Italian seasoning, parmesan, and eggs; mix well.
  3. Gently fold in ground turkey along with salt and pepper until just combined.
  4. Scoop mixture into balls and freeze for 20-25 minutes to firm up.
  5. Sear meatballs in a skillet until browned and cooked through (internal temperature of 165°F).
  6. For the sauce, sauté onion and garlic in olive oil, then whisk in pumpkin puree, seasonings, and chicken stock until smooth; simmer briefly before adding cream and parmesan.
  7. Combine cooked meatballs with the sauce before serving.
