  • 190g graham cracker crumbs
  • 35g sugar
  • 75g melted unsalted butter
  • 32 oz full-fat cream cheese
  • 325g granulated sugar
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 4 large eggs
  • 120g heavy cream
  • 240g sour cream
  • 1 tbsp cornstarch
  • 23 tablespoons lemon juice
  • 1 lb strawberries
  • 55g sugar for compote
  • 1 tsp cornstarch for compote
  • Juice of ½ a lemon for compote

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of a springform pan and bake for 10 minutes.
  2. In a large bowl, beat cream cheese until smooth. Gradually add granulated sugar, then mix in salt and vanilla essence.
  3. Add eggs one at a time. Stir in heavy cream, sour cream, cornstarch, and lemon juice until well combined.
  4. Pour the filling over the cooled crust and bake for 60–75 minutes until set but slightly jiggly in the center.
  5. Cool gradually in the oven with the door ajar for about an hour.
  6. For the compote, cook chopped strawberries with sugar over medium heat for about 5 minutes. Thicken with cornstarch mixed with lemon juice.
  7. Once cheesecake is cooled completely, top with strawberry compote before serving.
