  • 1 cup fresh or canned pineapple chunks
  • 1 cup jasmine rice
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 cup bell peppers (chopped)
  • Fresh cilantro or mint for garnish
  • Juice of 1 lime

Instructions

  1. Prepare the chicken by cutting it into bite-sized pieces and chop the pineapple if using fresh.
  2. Heat vegetable or olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned, about 5-7 minutes.
  3. Stir in bell peppers and any optional vegetables; cook for an additional 3-4 minutes.
  4. Mix in garlic powder, soy sauce, honey, and pineapple chunks.
  5. Add rinsed jasmine rice and pour in 2 cups of water or broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
