  • 1/3 cup cocoa powder
  • 1/4 cup oat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup peanut butter (or other nut/seed butter)
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 3/4 teaspoon vanilla extract
  • 1/3 to 1/2 cup chocolate chips (plus more for topping)

Instructions

  1. Preheat the oven to 350°F and line an 8×8 baking pan with parchment paper.
  2. Steam and mash the sweet potato until smooth.
  3. In a food processor, blend the mashed sweet potato, cocoa powder, oat flour, baking soda, salt, peanut butter, maple syrup, melted coconut oil, and vanilla until smooth.
  4. Fold in chocolate chips and pour the batter into the prepared pan. Sprinkle additional chocolate chips on top.
  5. Bake for about 25 minutes or until a toothpick comes out clean. Let cool before cutting into squares.
