  • 2 Sweet Potatoes (1 pound each), quartered
  • 1 Large Tart Apple, peeled and cored
  • 2 Tablespoons Olive Oil
  • 1 Onion, chopped
  • 2 Stalks Celery, chopped
  • 1 Large Carrot, chopped
  • 5 Cups Chicken Broth
  • 1 Cup Cream
  • Zest and juice of 1 Lemon
  • Salt and Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Arrange quartered sweet potatoes and apple on a greased baking sheet.
  2. Roast for about 40 minutes until tender. Allow cooling slightly before peeling the sweet potatoes.
  3. In a soup pot, heat olive oil over medium heat. Sauté onion, celery, bay leaf, and carrot until tender.
  4. Remove bay leaf. Add chicken broth along with roasted sweet potato and apple pieces.
  5. Blend until smooth using an immersion blender or regular blender.
  6. Return to pot; stir in cream, lemon zest, and juice. Season with salt and pepper.
  7. Warm gently without boiling before serving.
