  • 8 ounces cream cheese, softened
  • 1/3 cup powdered Swerve Sweetener
  • 1/2 tsp vanilla extract
  • 1/2 cup heavy whipping cream, room temperature
  • 1 cup heavy whipping cream
  • 1 cup unsweetened almond milk
  • 1/2 cup powdered Swerve Sweetener
  • 4 large egg yolks
  • 1/2 tsp xanthan gum
  • 1/3 cup cocoa powder
  • 3 tbsp butter, cut into 3 pieces
  • 1/2 tsp vanilla extract
  • 1 cup heavy whipping cream, chilled
  • 3 tbsp powdered Swerve Sweetener
  • 1/2 tsp vanilla extract
  • 1 tbsp cocoa powder
  • 1/2 ounce sugar free dark chocolate

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine almond flour, cocoa powder, powdered Swerve Sweetener, salt, melted butter, and water. Press firmly into a greased 9×13 inch baking dish and bake for 10 minutes. Let cool.
  2. In another bowl, beat cream cheese with powdered Swerve until smooth. Add vanilla and heavy whipping cream; mix until fluffy. Spread over cooled crust.
  3. For the chocolate pudding layer, whisk almond milk with Swerve in a saucepan over medium heat. Temper egg yolks with warm mixture before combining back into the saucepan. Cook until thickened; remove from heat and stir in xanthan gum, cocoa powder, butter, and vanilla.
  4. Pour pudding over cheesecake layer and let cool slightly.
  5. Whip heavy cream with Swerve until soft peaks form; spread on top of pudding layer. Chill for at least two hours before serving.
