  • 3 tbsp (38 g) granulated white sugar
  • 1/2 tsp vanilla
  • 12 oz (340 g) fresh strawberries, hulled and finely diced
  • 1/4 cup (50 g) granulated white sugar
  • 2 3/4 cups (344 g) all purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (200 g) granulated white sugar
  • 1 cup (227 g) unsalted butter, very softened
  • 1 egg, at room temperature
  • 2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar, for rolling dough in

Instructions

  1. In a mixing bowl, combine the cold cream cheese with 3 tablespoons of granulated sugar and vanilla extract.
  2. Use an electric mixer to beat until smooth and creamy. Set aside.
  3. Hull and finely dice the fresh strawberries. Sprinkle 1/4 cup of granulated sugar over the strawberries and mix gently. Let them sit for about 10 minutes to release their juices.
  4. In a large bowl, whisk together all-purpose flour, baking powder, baking soda, and salt.
  5. In another bowl, cream together the softened butter with 1 cup of granulated sugar until light and fluffy.
  6. Add in the egg and vanilla extract; mix until well combined.
  7. Gradually add the dry ingredients into the wet mixture until combined.
  8. Fold in the prepared strawberries gently.
  9. Preheat your oven to 350°F (175°C) while you shape your cookies.
  10. Using your hands or a cookie scoop, take portions of dough and flatten them slightly in your palm.
  11. Place about 1 teaspoon of cheesecake filling in the center of each flattened dough piece.
  12. Carefully fold up the edges around the filling to encase it completely.
