  • 1 scoop whey or casein blend protein powder
  • 1 tbsp cornstarch
  • 1/4 tsp baking powder
  • 1/4 cup liquid egg whites
  • 1/3 cup fat-free Greek yogurt
  • 12 tbsp water
  • 3 drops red food coloring
  • 1/2 tbsp white chocolate chips (optional)
  • 1 strawberry (for topping)
  • fat-free whipped cream (optional)
  • light pancake syrup (optional)

Instructions

  1. In a mixing bowl, combine oat flour, protein powder, cornstarch, and baking powder.
  2. In another bowl, mix liquid egg whites, Greek yogurt, water, and food coloring until combined.
  3. Pour the wet mixture into the dry ingredients and stir gently to avoid overmixing.
  4. Preheat a nonstick pan over medium heat and pour about 1/4 cup of batter onto the pan.
  5. Cook for 1-2 minutes on each side until golden brown; fold in white chocolate chips after flipping if desired.
  6. Serve topped with fresh strawberries and whipped cream.
