  • 2 Tbsp cold water
  • 2 cups frozen sliced strawberries
  • 2 Tbsp brown sugar, packed
  • 2 Tbsp granulated sugar
  • 1 Tbsp lemon juice (fresh or bottled)
  • 4 oz cream cheese, softened
  • 1/2 cup icing sugar
  • 1 cup plus 2 Tbsp heavy cream, chilled
  • Fresh strawberries, sliced
  • Icing sugar, sifted over

Instructions

  1. Prepare the strawberry filling by mixing cornstarch with cold water, then combining with frozen strawberries, sugars, and lemon juice in a saucepan over medium heat until bubbly. Stir in the cornstarch mixture until thickened and cool.
  2. For the cream filling, beat softened cream cheese with icing sugar until smooth. In another bowl, whip the chilled heavy cream until soft peaks form and then gently fold into the cream cheese mixture.
  3. Preheat your oven according to croissant dough instructions. Assemble by spooning strawberry filling onto each crescent triangle followed by a dollop of cream filling. Roll up from the wide end.
  4. Bake as directed until golden brown. Cool slightly before dusting with icing sugar.
