  • 1 large skinless salmon fillet (about lbs)
  • 2 cups fresh spinach (chopped)
  • ½ cup feta cheese (crumbled)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 2 tablespoons cream cheese (softened)
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon dried dill (or 1 teaspoon fresh dill)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine spinach, feta, garlic, olive oil, cream cheese, lemon zest, lemon juice, dill, salt, and pepper. Mix until well blended.
  3. Lay the salmon fillet skin-side down on a clean surface and spread the filling evenly over it.
  4. Carefully roll the salmon into a tight log shape and secure with toothpicks or kitchen twine.
  5. Place on a parchment-lined baking sheet and bake for about 18 minutes or until cooked through.
  6. Allow to cool slightly before slicing into pinwheels and serve warm.
