  • 1 large yellow bell pepper
  • 1 large onion
  • 4 cloves garlic
  • 1 inch ginger
  • 2 tablespoons olive oil
  • 2 tablespoons water
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 1/4 cup chopped green onions
  • Sesame seeds
  • Cooked rice

Instructions

  1. Marinate chicken: In a medium bowl, combine chicken with soy sauce, honey, rice vinegar, sriracha, cornstarch, and sesame oil. Mix well and refrigerate for at least 30 minutes.
  2. Prepare the sauce: Whisk together remaining soy sauce, honey, rice vinegar, sriracha, and water in a small bowl. Set aside.
  3. Cook chicken: Heat olive oil in a large skillet over medium-high heat. Add marinated chicken in batches; cook until browned on all sides (about 5-7 minutes). Remove from skillet.
  4. Sauté vegetables: In the same skillet, add remaining oil along with onion, bell peppers, garlic, and ginger. Cook until tender-crisp (about 5-7 minutes).
  5. Combine: Return cooked chicken to the skillet; pour sauce over the mixture. Simmer until the sauce thickens slightly (3-5 minutes).
  6. Serve hot over cooked rice or quinoa; garnish with green onions and sesame seeds.
