  • 1 ½ lbs peeled shrimp
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • ½ cup white apple vinegar or chicken stock
  • ¼ cup fresh lemon juice (from 1 lemon)
  • 2 ounces baby spinach
  • Italian seasoning, salt, and pepper to taste

Instructions

  1. Preheat the oven to 400°F. Cut the spaghetti squash into rings about 1.5 inches thick and place on a baking tray. Bake for 20 minutes until tender.
  2. While the squash bakes, season shrimp with Italian seasoning, salt, and pepper in a bowl.
  3. Melt butter in a large skillet over medium heat. Add minced garlic and sauté for one minute until fragrant.
  4. Add the seasoned shrimp and cook for about two minutes until they turn pink.
