Ingredients

  • 1/4 cup olive oil
  • 8 to 10 large cloves garlic, very thinly sliced
  • 4 ounces stale bread, torn or thinly sliced
  • 1 tablespoon smoked paprika
  • 6 to 7 cups chicken stock or vegetable broth
  • 4 large eggs, whisked
  • Fine sea salt and freshly ground black pepper, to taste

Instructions

  1. In a large stockpot, heat olive oil over medium heat. Sauté thinly sliced garlic for 2-3 minutes until fragrant but not browned. Stir in smoked paprika.
  2. Add torn bread pieces to the pot, tossing them in the garlic oil for another 3 minutes.
  3. Pour in chicken stock or vegetable broth and stir well. Break down the bread with a wooden spoon as it softens.
  4. Bring to a strong simmer, then create a whirlpool effect by stirring slowly while pouring in whisked eggs until delicate ribbons form.
  5. Adjust consistency with more broth if desired and season with salt, pepper, and additional paprika to taste.
  6. Serve hot in bowls.
