  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Pink food coloring (optional)
  • 4 ounces cream cheese, softened
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract
  • ½ cup strawberry jam
  • Pink glaze (made with powdered sugar and a few drops of milk)
  • Sparkling sugar for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In one bowl, mix flour, baking powder, and salt. In another bowl, beat together butter and sugar until fluffy. Add egg and vanilla; blend well. Gradually mix in dry ingredients until just combined.
  3. In a separate bowl, beat cream cheese with powdered sugar until smooth; stir in strawberry jam.
  4. Scoop tablespoon-sized dough onto the baking sheet, creating an indent in each ball for the filling. Fill each indent with cheesecake mixture.
  5. Bake for 10-12 minutes until edges are golden. Cool slightly before adding glaze.
