  • 1 medium yellow onion, chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 sprig fresh rosemary
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups chopped spinach or kale
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion, carrots, and celery. Sauté for 8–10 minutes until soft.
  2. Stir in minced garlic and tomato paste; cook for 1–2 minutes until fragrant.
  3. Add cannellini beans, vegetable broth, rosemary, thyme, bay leaf, salt, and pepper. Bring to a gentle boil.
  4. Reduce heat and let simmer uncovered for 20–25 minutes to meld flavors.
  5. In the last few minutes of cooking, stir in chopped spinach or kale until wilted.
  6. Remove the bay leaf and mix in lemon juice before serving hot.
