  • 2 pounds Yukon gold potatoes
  • 3 cloves garlic
  • 2 sprigs fresh rosemary
  • 4 tablespoons unsalted butter
  • ½ cup heavy cream
  • 1 tablespoon kosher salt
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions

  1. In a large pot, cover the cubed potatoes with cold water and add 1 tablespoon of salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes until fork-tender.
  2. In a small saucepan over medium heat, warm the butter and cream until melted.
  3. Add garlic and rosemary to the warmed mixture; steep for 10 minutes before removing herbs.
  4. Drain potatoes and return them to the pot. Mash until smooth.
  5. Gradually mix in the warm cream mixture, seasoning with ½ teaspoon kosher salt and ¼ teaspoon black pepper.
  6. Serve hot, garnished with extra rosemary or butter if desired.
