  • 2 ½ cups Oreo cookie crumbs
  • 5 tbsp unsalted butter
  • 16 oz cream cheese
  • ¾ cup granulated sugar
  • ¼ cup sour cream
  • 4 large eggs
  • 1 ½ tbsp cocoa powder
  • 1 ½ tsp vanilla extract
  • 1 tbsp red food coloring
  • ½ cup heavy cream
  • ¾ cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 325°F (163°C). Grease a springform pan and line with parchment paper.
  2. Combine Oreo crumbs and melted butter; press into the bottom of the pan. Bake for 8-10 minutes.
  3. For the red velvet layer, beat cream cheese and sugar until smooth. Add sour cream, eggs, cocoa powder, vanilla extract, and food coloring; mix until combined. Pour over crust.
  4. For the vanilla layer, repeat mixing with remaining ingredients without cocoa powder; pour over red velvet layer.
  5. Bake for 50-60 minutes until edges are set but center is slightly jiggly. Cool in oven with door ajar for one hour; refrigerate for at least six hours.
  6. Prepare ganache by heating heavy cream; pour over chocolate chips and stir until smooth.
  7. Spread ganache on chilled cheesecake; garnish with whipped cream and Oreo crumbs.
