  • 22 oz raspberries (fresh or frozen)
  • 1 cup unsalted butter
  • 1 lb mascarpone cheese
  • 1 cup whipping cream (cold)
  • 2 packs ladyfingers
  • 2 lemons (juiced and zested)
  • 1 cup granulated sugar
  • ⅛ teaspoon sea salt
  • 1 ½ cup water
  • ½ cup granulated sugar

Instructions

  1. Prepare raspberry curd by cooking raspberries, lemon juice, water, and sugar in a saucepan until thickened. Strain to remove seeds.
  2. In a large bowl, whip together mascarpone cheese and cold whipping cream until smooth. Fold in cooled raspberry curd.
  3. Dip ladyfingers into lemon juice or raspberry juice mixture, layer half in a baking dish, spread half the cream mixture on top. Repeat layering.
  4. Chill in the refrigerator for at least 4 hours or overnight before serving.
