  • 4 boneless, skinless chicken breasts
  • Garlic salt (to taste)
  • 18 corn tortillas (6-inch), torn in half
  • 1 can (28 oz) green chile enchilada sauce
  • 1 package (16 oz) shredded Monterey Jack cheese
  • 1 container (8 oz) reduced-fat sour cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a medium-sized baking dish.
  2. Season the chicken breasts with garlic salt, place them in the baking dish, and bake for about 45 minutes until fully cooked.
  3. Once cooled, shred the chicken into bite-sized pieces.
  4. Char tortilla halves over an open flame for about 1 minute until lightly puffed.
  5. Layer half an inch of enchilada sauce in the baking dish, followed by a layer of tortillas.
  6. Add half of the shredded chicken, one-third of the cheese, half of the sour cream, and another third of the enchilada sauce.
  7. Repeat layers with remaining ingredients.
  8. Cover with foil and bake for 45 minutes until heated through.
  9. Allow to cool slightly before serving.
