  • 250g cream cheese
  • 100g powdered sugar
  • 100g pistachio paste
  • 200ml heavy cream
  • 200g fresh raspberries
  • 50g sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch, dissolved in 1 tbsp water
  • 2 eggs
  • 50g sifted flour
  • ½ tsp baking powder
  • 200g white chocolate
  • 100ml heavy cream
  • 2 tbsp pistachio paste
  • Green food coloring (optional)
  • Crushed pistachios
  • Fresh raspberries

Instructions

  1. Prepare the raspberry center by cooking raspberries, sugar, and lemon juice in a saucepan until soft. Thicken with cornstarch slurry, pour into molds, and freeze until solid.
  2. Beat cream cheese, powdered sugar, pistachio paste, and vanilla until smooth. Whip cold heavy cream to stiff peaks and fold into the mixture.
  3. Assemble the domes: fill molds with cheesecake mixture, insert raspberry centers, top with more cheesecake filling, smooth out tops, and freeze until firm.
  4. Make the sponge base by beating eggs and sugar until fluffy. Fold in flour and bake until golden; cut rounds to fit in molds.
  5. Prepare mirror glaze by heating cream and pouring it over chopped white chocolate; mix in pistachio paste and cool slightly before glazing the domes.
  6. Unmold the domes, glaze them evenly, decorate with garnishes, and chill before serving.
