  • ¼ cup granulated sugar
  • 1 tsp salt
  • 2 ¼ tsp active dry yeast
  • 1 cup cold unsalted butter
  • ¾ cup cold milk
  • 1 cup ground pistachios
  • ½ cup powdered sugar
  • ¼ cup almond flour
  • ¼ cup unsalted butter (softened)
  • 1 egg (for filling and wash)
  • 2 tbsp crushed pistachios (for topping)
  • 2 tbsp honey or simple syrup (optional)

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and yeast. Mix in cold milk until the dough forms. Incorporate cold butter in layers and chill for at least an hour.
  2. Roll out the dough into a rectangle. Fold into thirds and rotate; repeat this process three to four times while chilling between folds.
  3. For the filling, blend ground pistachios, powdered sugar, almond flour, softened butter, egg, and vanilla until smooth.
  4. Roll out laminated dough to about ¼ inch thick; cut into triangles. Place filling on the wide end of each triangle and roll into crescent shapes.
  5. Let croissants rise at room temperature for about 1 to 1.5 hours until puffed.
  6. Brush with egg wash, sprinkle with crushed pistachios, and optionally glaze with honey before baking at 375°F for 18 to 22 minutes until golden brown.
