  • ½ cup pistachio paste
  • 3 tbsp powdered sugar
  • 2 tbsp heavy cream
  • 1 can croissant dough (about 8 oz)
  • 1 egg (for egg wash)
  • Melted dark chocolate and chopped pistachios for drizzling

Instructions

  1. Prepare the chocolate filling by melting dark chocolate chips in a microwave-safe bowl until smooth.
  2. In another bowl, whisk together pistachio paste, powdered sugar, and heavy cream until creamy; add food coloring if desired.
  3. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  4. Unroll the croissant dough and place half a tablespoon of pistachio crème on one side and melted chocolate on the other side of each triangle.
  5. Fold the dough over to seal tightly; crimp edges with a fork if needed.
  6. Place the croissants seam-side down on the baking sheet, brush with beaten egg, and bake for 12–15 minutes until golden brown.
  7. Allow cooling slightly before drizzling with melted chocolate and topped with crushed pistachios.
