  • 500g bread flour
  • 75g granulated sugar
  • 10g instant yeast
  • 10g salt
  • 300ml cold whole milk
  • 60g unsalted butter (melted)
  • 250g cold European butter
  • 200g dark chocolate (70% cocoa)
  • 150g shelled roasted pistachios
  • 50g brown sugar
  • Vanilla extract
  • Almond extract

Instructions

  1. In a bowl, combine flour, sugar, yeast, and salt. Mix in cold milk and melted butter until smooth. Knead for about 8 minutes.
  2. Wrap the dough in plastic wrap and refrigerate for at least 4 hours or overnight.
  3. Create a butter block by pounding cold European butter between parchment sheets into an 8×8 inch square; chill.
  4. Roll out the dough to a rectangle, place the chilled butter on half, fold over, and roll again into a rectangle. Repeat folding two more times with chilling intervals.
  5. Pulse pistachios with brown sugar and extracts until coarsely ground.
  6. Roll out the dough again and cut into rectangles; fill with chocolate pieces and pistachio mixture before rolling into croissants.
  7. Let rise until doubled, brush with egg wash, sprinkle with pistachios and sea salt; bake at 400°F (200°C) for about 18-20 minutes.
