Ingredients

Scale
  • 1 (20 oz) can crushed pineapple (with juices)
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 (12 oz) can evaporated milk
  • 1 cup unsalted butter
  • 1 1/2 cups sugar
  • 2 cups shredded coconut
  • 1 cup chopped pecans
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine crushed pineapple, eggs, vegetable oil, granulated sugar, and brown sugar until blended. Add flour, baking soda, and salt; stir until just combined.
  3. Pour the batter into the prepared dish and bake for 35–40 minutes or until a toothpick comes out clean.
  4. While the cake bakes, prepare the icing by simmering evaporated milk, butter, and sugar in a saucepan until melted. Stir in shredded coconut, toasted pecans, vanilla extract, and salt; simmer for an additional 5–7 minutes until thickened.
  5. Once baked, pour the icing over the warm cake and allow it to cool before serving.
