  • 1 cup fresh or canned pineapple chunks, drained (reserve juice)
  • 1 bell pepper, diced
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 cup white or jasmine rice, rinsed
  • 2 tablespoons soy sauce (or gluten-free tamari)
  • 1 tablespoon brown sugar or honey
  • 2 tablespoons vegetable oil or sesame oil, divided
  • 1/4 cup water or chicken broth

Instructions

  1. Prepare all ingredients by cutting the chicken, dicing the bell pepper, chopping green onions, mincing garlic, and grating ginger.
  2. Heat oil in a large skillet over medium-high heat. Cook chicken until golden brown (about 5 minutes), then remove from the skillet.
  3. In the same pan, sauté garlic, ginger, and bell pepper until fragrant.
  4. Stir in rinsed rice and lightly toast for about one minute. Add pineapple chunks and some reserved juice.
  5. Return chicken to the pan; pour in soy sauce, sugar/honey, and water/broth. Cover and cook until rice is tender (about 15 minutes).
  6. Fluff rice with a fork; garnish with green onions before serving.
