  • 2 tablespoons vegetable oil
  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 cup diced bell peppers (mixed colors)
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 1 can (20 oz) pineapple chunks in juice, drained
  • 2 tablespoons soy sauce
  • 1 tablespoon grated ginger
  • ½ teaspoon black pepper
  • 1 tablespoon sesame oil
  • Green onions for garnish

Instructions

  1. Rinse the rice under cold water until clear.
  2. In a medium saucepan, combine rinsed rice with 4 cups of water. Bring to a boil, reduce to a low simmer, cover, and cook for 18–20 minutes.
  3. Meanwhile, heat vegetable oil in a large skillet over medium-high heat. Add chicken pieces seasoned with black pepper; sauté until golden brown, about 5–7 minutes.
  4. Stir in onion, bell peppers, and garlic; cook for another 3–4 minutes until tender.
  5. Add drained pineapple chunks, soy sauce, and ginger to the skillet; mix well and cook until heated through.
  6. Fluff the rice with a fork and add it to the skillet; gently combine everything.
  7. Drizzle sesame oil over the dish and toss to finish.
  8. Serve warm garnished with chopped green onions.
