  • 1 cup diced chicken breast
  • 1 cup diced pineapple
  • 1/2 cup diced carrots
  • 1/2 cup peas
  • 1/2 cup diced bell peppers
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil

  3. Push vegetables aside and add cooked jasmine rice; stir to combine. Incorporate diced pineapple and stir-fry for about 2 minutes.
  4. In a mixing bowl, combine soy sauce and pour over the rice mixture. Stir well and season with salt and pepper to taste.
  5. Add the cooked chicken back into the skillet; stir until heated through (2–3 minutes).
