  • 1 lb Chicken Breast (or thighs)
  • 2 tbsp Olive or Sesame Oil
  • 2 cloves Garlic, minced
  • 1/2 cup Soy Sauce (low sodium)
  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar
  • 1 tsp Cornstarch
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks
  • 1/2 Red Bell Pepper, diced
  • 1/4 cup Green Onions, chopped

Instructions

  1. Cut the chicken into bite-sized pieces and pat dry.
  2. Heat oil in a large skillet over medium-high heat. Sauté the chicken for 5-7 minutes until browned and cooked through; remove and set aside.
  3. In the same skillet, sauté garlic until fragrant. Add soy sauce, pineapple juice, honey or brown sugar, and rice vinegar; stir to combine.
  4. Mix cornstarch with water in a bowl until dissolved; slowly add to the skillet while stirring. Simmer for 2-3 minutes until thickened.
  5. Return chicken to the skillet; add pineapple chunks, diced bell pepper, and green onions. Cook for an additional 2-3 minutes.
  6. Serve over rice topped with optional garnishes.
