  • 1 cup pineapple chunks, fresh or well-drained canned
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon freshly grated ginger
  • Salt and black pepper, to taste
  • Garnish: ¼ cup green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken and cook until golden brown, then set aside.
  2. In the same skillet, sauté onion, garlic, and red bell pepper until fragrant.
  3. Add pineapple chunks and cook for about 2 minutes until heated through.
  4. Stir in rice, chicken broth, soy sauce, ginger, salt, and pepper; bring to a boil.
  5. Reduce heat, cover, and simmer for 18–20 minutes until rice is tender.
  6. Return chicken to skillet; stir gently to combine and heat through.
  7. Serve topped with sliced green onions and sesame seeds.
