  • 1 (14 oz) package Golden Oreos
  • 2 tablespoons powdered sugar
  • 1 (8 oz) block cream cheese (softened)
  • 2 tablespoons coconut vanilla extract (alcohol-free) (optional)
  • 1/2 cup crushed pineapple (very well drained)
  • 1 cup shredded coconut
  • 36 stemless maraschino cherries
  • 2 (10 oz) packages Ghirardelli White Melting Wafers
  • toasted unsweetened shredded coconut (for topping)

Instructions

  1. Line a baking sheet with wax paper.
  2. Crush Golden Oreos in a food processor and mix with powdered sugar.
  3. Add softened cream cheese and blend until smooth.
  4. Fold in drained crushed pineapple and shredded coconut.
  5. Chill the mixture in the freezer for 20 minutes.
  6. Scoop mixture, place a maraschino cherry in each scoop, and roll into balls.
  7. Freeze truffles again for 20 minutes.
  8. Melt white chocolate wafers, then dip each truffle and sprinkle with toasted coconut.
  9. Allow chocolate to set before serving.
