  • 6 Tbsp aquafaba (chickpea water)
  • 2 tsp ground flaxseed
  • 6 Tbsp water
  • 5 oz coconut milk (room temperature)
  • 2 oz melted coconut oil
  • 16 oz all-purpose flour
  • 2 oz sugar
  • 1 tsp salt
  • 1 ½ tsp quick-rise yeast
  • 3 c olive oil (for frying)
  • Powdered sugar (for topping)
  • Jam (optional)
  • Shredded coconut (optional)

Instructions

  1. In a bowl, whisk together aquafaba, flaxseed, water, and coconut milk. Stir in melted coconut oil and sprinkle yeast; let activate for 5 minutes.
  2. In another bowl, mix flour, sugar, and salt. Gradually add wet mixture while stirring until combined.
  3. Knead dough on a floured surface for 5–7 minutes until smooth. Place in a greased bowl, cover, and let rise for 90 minutes.
  4. Roll out dough to ½-inch thickness and cut into shapes. Let rest briefly.
  5. Heat olive oil in a pot to 350°F (175°C) and fry doughnuts until golden brown on both sides.
  6. Toss warm doughnuts in powdered sugar or coat with jam before serving.
