1 cup creamy or chunky peanut butter
4 tablespoons unsalted butter
½ cup brown sugar
¼ cup whole milk
1 teaspoon vanilla extract
1 cup caramel sauce (store-bought or homemade)
1 cup chocolate chips (melted)
Optional: sea salt for garnish
Instructions
In a medium saucepan over medium heat, melt the butter with brown sugar and milk until bubbling. Remove from heat and stir in peanut butter and vanilla until smooth. Mix in oats until well coated.
Scoop portions onto parchment-lined trays, flattening slightly and creating indentations for the caramel.
Fill each indentation with caramel sauce.
Melt chocolate chips in a microwave-safe bowl, then drizzle over cookies.
