Ingredients

  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 2 medium carrots, diced
  • 3 ribs celery, diced
  • 2 cloves garlic, minced
  • 29 oz diced tomatoes (with liquid)
  • 15 oz dark red kidney beans (drained and rinsed)
  • 15 oz cannellini beans (drained and rinsed)
  • 15 oz tomato sauce
  • 1 cup beef broth
  • 8 oz Ditalini pasta
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp sugar

Instructions

  1. In a large Dutch oven over medium heat, brown the ground beef for about 7 minutes until fully cooked. Drain excess grease.
  2. Add onion, carrots, and celery to the pot and sauté for about 10 minutes. Add garlic and cook for an additional 1-2 minutes.
  3. Stir in diced tomatoes, beans, tomato sauce, broth, basil, oregano, salt, pepper, and sugar. Simmer for 20 minutes.
  4. Cook Ditalini pasta separately according to package instructions until al dente. Drain and set aside.
  5. Just before serving, mix the drained pasta into the soup.
