  • 1/4 cup (60 ml) cold water or milk
  • 1 1/4 teaspoons (4g) unflavored powdered vegan gelatin
  • 2 cups (480 ml) heavy cream
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon pure vanilla extract or seeds from 1 vanilla bean

Instructions

  1. In a small mixing bowl, combine cold water or milk and sprinkle the vegan gelatin over it. Let it sit for 5–10 minutes to bloom.
  2. In a medium saucepan, whisk together heavy cream, sugar, and vanilla on medium heat until just boiling. Remove from heat.
  3. Stir in the bloomed vegan gelatin until fully dissolved. If needed, gently heat to melt any remaining crystals without boiling.
  4. Pour the mixture into individual serving dishes and refrigerate for at least 2–4 hours until set.
  5. Serve chilled with your choice of toppings like fresh fruit or berry sauce.
