  • 2 eggplants
  • 1 lb ground lamb or beef
  • 1 large sweet onion
  • 3 cloves garlic
  • 1 can (14 oz) canned tomatoes
  • 1 cinnamon stick
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • Grated Parmesan cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice eggplants into 1/4-inch rounds, salt them, and let sit for 30 minutes. Rinse and pat dry.
  3. Sauté eggplant slices in olive oil until golden brown; set aside.
  4. In the same skillet, cook chopped onions until translucent; add minced garlic for another minute.
  5. Brown the ground lamb or beef with the onion mixture, then stir in canned tomatoes and cinnamon stick. Simmer for 15-20 minutes.
  6. For the béchamel sauce: Melt butter in a saucepan, whisk in flour until golden, then gradually add milk while stirring until thickened. Stir in grated Parmesan.
  7. Layer half of the sautéed eggplant followed by half of the meat mixture in a baking dish. Repeat layers and top with béchamel sauce.
  8. Cover with foil and bake for about 30 minutes; remove foil and bake for another 15-20 minutes until golden brown.
  9. Let rest for at least 15 minutes before serving.
