  • 1 medium green bell pepper (diced)
  • 1 medium red bell pepper (diced)
  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 1 1/2 cups long-grain white rice
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • 3 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes (optional)
  • 1 pound shrimp (peeled and deveined)
  • 2 green onions (chopped for garnish)
  • Fresh parsley (chopped for garnish)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced turkey sausage and cook until browned.
  2. Stir in diced onion, green bell pepper, red bell pepper, celery, and minced garlic. Sauté for 5–7 minutes until softened.
  3. Add rice, Cajun seasoning, smoked paprika, and optional cayenne pepper. Stir to coat the rice.
  4. Pour in chicken broth and diced tomatoes if using. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  5. Add shrimp to the pot. Cover again and cook for 5–7 minutes until shrimp are pink and cooked through.
  6. Remove from heat, fluff with a fork, garnish with green onions and parsley before serving.
