  • 6 cups chicken or beef broth
  • 1 can (14 oz) diced tomatoes
  • 23 potatoes, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • Optional: spinach, kale, or zucchini

Instructions

  1. Wash and chop all vegetables: dice the potatoes and onions, slice the carrots, chop celery stalks, and mince the garlic.
  2. In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and garlic; sauté until soft (about 3-4 minutes). Stir in carrots and celery; cook for an additional 5 minutes.
  3. Add diced potatoes, diced tomatoes (with juice), chicken or beef broth, Italian seasoning, salt, and pepper.
  4. Gently add the meatballs into the pot. Bring mixture to a gentle boil.
  5. Reduce heat to low; cover and simmer for about 30 minutes until vegetables are tender.
  6. If desired, stir in greens like spinach or kale during the last few minutes of cooking until wilted.
