  • 12 street taco size corn tortillas
  • 3 tablespoons vegetable or canola oil
  • 16 ounces traditional refried beans
  • 2 cups shredded rotisserie chicken breast meat
  • 2 cups shredded cheese (sharp cheddar or Monterey Jack)
  • sour cream (or as needed)
  • ¼ cup finely diced red onion (or as needed)
  • ¼ cup chopped or torn cilantro leaves (or as needed)
  • 6 cherry or grape tomatoes (chopped into small pieces)
  • hot sauce (or to taste)

Instructions

  1. Preheat the oven to 450°F and line a baking sheet with foil.
  2. Brush both sides of the tortillas with oil and place them on the baking sheet.
  3. Bake for 9 to 10 minutes until firm but not overly browned.
  4. Let cool for 5 minutes. Flip each tortilla over and spread with refried beans, then top with chicken and cheese.
  5. Return to the oven for another 5 to 6 minutes until heated through and cheese is melted.
  6. Add your desired toppings before serving warm.
