  • 1/2 cup unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 1 cup pineapple rings (chopped)
  • 2 tablespoons brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, combine graham cracker crumbs and melted butter until well mixed. Press one tablespoon into each muffin cup.
  3. Beat the softened cream cheese until smooth, then mix in granulated sugar until fluffy.
  4. In a saucepan over medium heat, caramelize chopped pineapple with brown sugar until golden.
  5. Spoon two tablespoons of cheesecake filling into each crust and top with caramelized pineapple.
  6. Bake for about 20 minutes or until they have a slight jiggle in the center. Cool completely before refrigerating for at least two hours.
