  • 1/2 large jalapeño (diced)
  • 1 small onion (finely diced)
  • 1 tsp olive oil
  • 1/2 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 1 can (14.5 oz) fire-roasted diced tomatoes with juice
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 can (4 oz) diced green chiles
  • 6 large eggs
  • 2 oz colby jack cheese (shredded)
  • Whole wheat or corn tortillas for serving

Instructions

  1. Preheat your oven to 450°F.
  2. Heat olive oil in a cast iron skillet over medium heat. Sauté the finely diced onions and jalapeños for about 2 minutes until softened.
  3. Stir in ground cumin and cayenne pepper; cook for another 2–3 minutes until fragrant.
  4. Add fire-roasted diced tomatoes, black beans, and diced green chiles to the skillet. Simmer on low heat for about 15–20 minutes until slightly thickened.
  5. Create small pockets in the mixture using the back of a spoon and crack an egg into each pocket.
  6. Bake in the preheated oven for approximately 5 minutes until eggs begin to set but are still moist.
  7. Switch to broil, sprinkle shredded colby jack cheese over the top, and broil for about 1–3 minutes until cheese is melted and bubbly.
