  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 2 pounds lean ground beef (or half beef and half chicken)
  • ½ cup milk
  • 2 large eggs
  • ¾ cup breadcrumbs
  • 3/4 cup ketchup (for both meatloaf and glaze)
  • ¼ cup brown sugar
  • 2 tablespoons apple cider vinegar
  • Italian seasoning
  • salt
  • pepper
  • fresh parsley

Instructions

  1. Preheat oven to 350°F.
  2. Sauté onions in melted butter until softened; add minced garlic briefly.
  3. In a large mixing bowl, combine sautéed onions and garlic with remaining meatloaf ingredients; mix until just combined.
  4. Shape the mixture into a loaf in a loaf pan.
  5. Bake for about 40 minutes.
  6. Mix glaze ingredients and spread over the top of the meatloaf; return to oven for an additional 20–30 minutes.
  7. Allow resting for about 10 minutes before slicing.
