  • 5 Large eggs (separated, room temperature)
  • 1 cup White granulated sugar (divided)
  • 1 1/2 tsp Vanilla extract
  • 1/4 cup Whole milk (room temperature)
  • 1 cup All-purpose flour (spooned and leveled)
  • 1 tsp Baking powder
  • 1/4 tsp Salt
  • 14 oz Sweetened condensed milk
  • 12 oz Evaporated milk
  • 1/2 cup Heavy whipping cream
  • 1 cup Heavy whipping cream (cold)
  • 1/4 cup Powdered sugar
  • 1 tsp Vanilla extract
  • 1/2 cup Mango puree (about 1 large mango, plus more for drizzling on top – optional)
  • Fresh mango (peeled and cut into small chunks)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat the egg yolks with half of the sugar until light and fluffy. Add vanilla extract and whole milk; mix until combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture until just combined.
  4. In a separate bowl, beat egg whites until soft peaks form. Gradually add remaining sugar while continuing to beat until stiff peaks form.
  5. Gently fold the egg whites into the batter using a rubber spatula until no white streaks remain.
  6. Pour batter into a greased 9×13 inch baking dish. Bake for about 25 minutes or until a toothpick inserted comes out clean. Let cool completely.
  7. In a bowl, combine sweetened condensed milk and evaporated milk. Mix well.
  8. Once cooled, poke holes all over the cake with a fork. Slowly pour the milk mixture over the cake so it can soak up all that deliciousness.
  9. In another bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form. Spread over soaked cake evenly.
  10. Drizzle mango puree over whipped cream topping. Garnish with fresh mango chunks for added flavor and visual appeal.
