  • 34 medium sweet potatoes
  • 2 tbsp olive oil
  • 1 can chickpeas
  • ½ tsp paprika
  • ½ tsp salt
  • ½ cup hummus
  • ½ small red onion
  • â…“ cup chopped parsley
  • â…“ cup vegan feta cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve sweet potatoes lengthwise, scoring the flesh in a crosshatch pattern. Toss with olive oil and salt.
  3. Place sweet potatoes cut-side up on a baking sheet and roast for 25–30 minutes until caramelized.
  4. Drain and rinse chickpeas, then toss them with olive oil, paprika, and salt. Spread on another baking sheet and roast for 20–25 minutes until crispy.
  5. Assemble by placing roasted sweet potatoes on a platter, adding hummus, crispy chickpeas, sliced red onion, chopped parsley, and any additional toppings.
