  • 4 tablespoons butter (or olive oil for vegan option)
  • 1/2 teaspoon salt
  • 3 cups water
  • Zest and juice of 1 lemon
  • 1/8 teaspoon turmeric (optional)
  • 1 tablespoon chopped parsley (for garnish)

Instructions

  1. Rinse the rice under cold water in a fine mesh strainer until the water runs clear.
  2. In a medium pot over medium heat, melt the butter. Add the rinsed rice and salt; cook for about 3 minutes, stirring occasionally until slightly toasted.
  3. Pour in the water along with lemon zest and juice. Bring to a boil, then reduce heat to low and cover. Simmer for 15 minutes.
  4. After cooking, remove from heat and let it sit covered for an additional 5-10 minutes.
  5. Fluff with a fork, sprinkle with turmeric if desired, and garnish with chopped parsley before serving.
